Stir-Fried Kimchi with Prime Beef
-store bought kimchi (readily available in most Asian grocery stores), about 2-3 cups.
-green onion 2-4, depending on personal taste. I like lots of green onion, so I usually put in 3-4 for a plate enough for 4 people. Cut into section about 1-1.5 inch long. I usually cut the white part lengthwise into half before cutting into sections. This makes faster cooking.
-beef or pork thin slices, cut into 1.5-2 inch sections. I like meat with marbling so it is more tender. I made this dish with USDA thinly sliced prime beef. I usually use pork but only had beef on hand the other night. In this instance, I used about .5 lb of beef.
-2 cloves of garlic, sliced in thin slices
-sear meat quickly on hot pan, use only enough oil to avoid sticking to pan then set aside
-add another tablespoon of oil to pan and add garlic and white part of green onion. Stir-fry for about 30 second.
-add kimchi, 1/2 tablespoon of dark soy sauce and 1 teaspoon of sugar to the pan. Taste to suit your personal preference. I usually don't like my food too salty. Stir-fry about 30 seconds.
-add green part of green onion and beef and finish stir-fry for another 30 seconds.
