Easy Holiday Entertaining: Pre-Seasoned Prime Rib from Costco

After serious consideration, I should really buy Costco stock. It seems impossible to me to leave a Costco location with less than a $100 receipt. With that being said, I love Costco. Over Thanksgiving, we got a pre-seasoned prime rib there and it was roasted to perfection, per instruction on the package. I don't really stress about holiday entertaining because there are so many shortcuts and tips to make a meal or event appear homemade. Honestly I don't want to slave for hours in the kitchen, I want to enjoy myself with my guests.
Toss a salad,  roast a veggie or two, arrange cheese and gourmet crackers on a platter artfully, fresh fruits with ice cream, and to finish with a couple bottles of good wine. This will make a gal hostess of the year among your family and friends.  What is your easy entertaining shortcut??
