One of my favorite simple lunch is to toss together freshly diced tomato, basil, olive oil and garlic salt. Let the mixture sit a for few minutes and spoon seasoned tomato chunks onto a slice of freshly toasted French bread. There is no exactly ingredient and portion. I just salt and pepper to taste. When adding olive oil, just a light coating will suffice.
I also seasoned French bread with pepper and garlic salt before toasting the slice golden brown. It takes literally minutes to make but a healthy freshly made lunch is really priceless. Enjoy!
