Instead of eating out all the time, I resolute to cook at home more often so I know what goes into a meal. Two of my favorite dishes to prepare whenever I feel lazy are baby arugula salad with good parmigiano-reggiano cheese and capellini and organic sausage in tomato sauce. Instead of making everything from scratch, I will use store bought organic tomato sauce to cut down cooking time.
Pasta:
Cut fresh organic sausage into bite size chunks, and brown in saute pan.
Add bite size onion chunks and cook until soft.
Add organic tomato sauce and cook for about 20 minutes.
While sauce is cooking, prepare water to cook capellini which takes only about 2-3 minutes.
Toss together with diced basil, and shave parmigiano-reggiano on top of pasta.
Salad:
Toss Baby arugula with lemon juice, olive oil, salt and pepper to taste
Shave thin slices of parmigiano-reggiano to finish. This can be done while waiting water to boil.

ReplyDeletei love arugula! one of my fav restaurants serves a similar salad but with some additions; sweet kernal corn, sliced black olives, articokes, tomatoes, and cucumbers (they also use parm cheese slices). i make similar versions @ home, sooo yummy and healthy too! :)
