Easy Savvy Entertaining: Open Face Sandwich

If eating can be a hobby then it is one of my most favorite hobbies. Yesterday, gal pal and I tried this new cafe in Irvine called Hero Cafe. The location was rather straight forward without much frill. Service was friendly and prompt. Food choices on the menu were geared toward healthy eating which I appreciated. We ordered a tomato bruschetta and 2 orders of blue crab salad sandwich. The portion was just right for me, but I have a rather small appetite. Blue crab has a delicate flavor, very light. Tomato bruschetta on the other hand is more flavorful but slightly on the salty side.
After lunch, I thought these are perfect for entertaining. It is perfect add-on for a summer BBQ, appetizer, or finger food for a light snack party such as wine tasting.

Tomato Bruschetta:
-Diced tomato
-Handful of Italian basil, torn to small pieces
-Roasted garlic infused olive oil --- I can taste roasted garlic in the tomato chunks
-Good balsamic vinegar
-Salt and pepper to taste
-Mix tomato chunks, basil, olive oil together and flavor with salt and pepper (I like to add some open roasted garlic in the mixture for additional flavor)
-Sliced French bread (or similar Italian bread) about 1/2 inch thick, brushed with garlic olive oil and grilled
-Top each slice of grilled French bread with tomato mixture and serve immediately

Blue Crab Sandwich:
-Fresh cooked lump blue crab meat (any other crab meat will be okay)
-White onion diced into little chunks --- I like to soak them in water a few minute to take away some of onion's pungent flavor
-Fresh lemon juice to add a bit of zest to crab meat
-Salt and pepper to flavor
-Mix all ingredients together with mayonnaise. I would go easy on the mayo so the sandwich is healthier.
-Grill French bread 1/2 inch thick (or similar bread) with light brushing of olive oil
-Top bread with good serving of crab salad and serve immediately.

When I cook, I don't really measure ingredients. I usually grab what I need and play with ingredients to suit my taste. Perhaps this is why I am such a terrible baker. With summer birthdays and parties, there are so many events to prepare so this will sure make my life easier. What about you, do you like bruschetta and blue crab salad??
