On a lazy day, I love to treat myself to a comfy salad that is not only delicious but healthy as well. One of my favorite seafood salads is salmon with crispy salmon skin salad with Japanese Ponzu dressing. Ponzu sauce is slightly sour which is perfect to cut the richness of pan fried salmon. This savvy gal gets her share of essential omega 3 complex from yummy salmon along with a healthy portion of green and light salad dressing. This wild caught salmon salad is very popular among my guests whenever I entertain at home. It is relatively inexpensive but the wow factor is 100%.
Direction:
-Fresh wild caught salmon with skin on, fillet fish from skin, leaving only a thin layer on flesh along with the skin
-Salt and pepper fish and skin on both side, marinate for about 1-2 hours --- I usually add a dash of Japanese cooking sake and Japanese style red pepper for added flavor
-Coat fish and skin lightly with corn starch
-Use good olive oil to pan fry fish until done, break salmon fillet into bite size pieces
-Cut salmon skin into about 1/4 wide stripes and pan fry until crisp
-Pile salmon pieces on top of green that has been tossed with ponzu salad dressing
-Add crispy salmon skin on top and serve immediately
-Drizzle additional dressing on top of salmon pieces and crispy skin if desired
Ponzu Salad Dressing:
-Japanese Ponzu sauce (just use enough to coat greens and a little on the side to drizzle over fish)
-A dash of toasted sesame oil for flavor
-A couple tablespoon of light flavor olive oil --- You can add more but I like to keep calories low
-Salt and pepper to taste
-A little squeeze of lemon juice to add fruitiness and I usually add a bit of sugar for slight sweetness
Even though I am a believer of dining only at the table, on a particularly tiring night, I would curl up on the sofa with this little salad to watch my favorite movie or TV show and let rules fly out the window. What is your go-to healthy fish dish?
That looks very delicious! =D I like to bake salmon without the skin on. I'd coat the salmon with lemon, dill, butter, salt and pepper. I'd pop it in the oven for like.. 25 min at 350 degrees. It's really yummy. =]

ReplyDeleteMmm this looks so good! I've been really into fresh salads as well lately, but have yet to try incorporating fish. My fav way to eat fish is steamed with the Chinese sauce of oil, ginger and green onion.
